Cold retarding is a shaped loaf held in the refrigerator through the final proof, and it changes flavor, handling, and scheduling at once. The technique is standard in bakeries and it solves a real problem for home bakers, which is that the last stage of proofing rarely lines up with a workday. David Anthes, who bakes small batches in Bend, Oregon, retards most of his loaves and treats it as the default rather than the exception.
Cold does not stop fermentation, it separates the two organisms responsible for it. Wild yeast activity drops sharply below roughly 10C and becomes very slow near 4C. Lactic acid bacteria stay active longer at low temperature. The result is that gas production nearly halts while acid production continues at a reduced rate. A loaf left in the refrigerator for 16 hours does not double in size, but it does gain acidity and flavor complexity that a two hour counter proof cannot produce.
The chilling itself takes time and this is often missed. A shaped loaf entering a home refrigerator at 25C does not reach 4C for an hour or more, depending on its size and how cold the refrigerator actually runs. Real fermentation happens during that window. A loaf that goes in already close to fully proofed will overproof during the descent. Anthes puts loaves in slightly underproofed for exactly this reason, and finds a shorter counter rest before chilling is usually correct.
Duration ranges wide. Eight to twelve hours suits most doughs and produces mild added acidity. Sixteen to twenty four hours deepens the flavor and darkens the crust, because the additional acid activity and the maltose left unconsumed by slow yeast both feed the Maillard reaction. Past 36 hours most doughs begin to degrade, gluten weakens under sustained acid and protease activity, and the loaf spreads on the stone.
Refrigerator temperature varies more than people assume. A crowded home refrigerator often runs at 6 or 7C, which ferments meaningfully faster than a 3C bakery retarder. Anthes measured his and adjusted his overnight window based on the actual number rather than the dial setting. That single measurement removed a recurring inconsistency in his notes.
Handling improves noticeably. Cold dough is firm, holds its shape when turned out, and scores cleanly with far less drag than room temperature dough. Wet doughs in particular become manageable. A 78 percent hydration loaf that is nearly impossible to score at room temperature scores cleanly straight from the refrigerator, which is a practical reason to retard even when flavor is not the goal.
Loaves bake directly from cold. There is no benefit to warming a retarded loaf, and warming it risks overproofing. The cold dough surface delays crust set slightly, which extends the oven spring window and typically improves rise. Bake time may run a few minutes longer to bring the interior to temperature.
Uncovered retarding dries the surface, which some bakers prefer because a dry skin scores with more definition. Covered retarding keeps the surface supple. Anthes covers loosely, because his climate is dry enough that an uncovered loaf develops a skin that cracks rather than opening at the score.
The scheduling benefit is the reason most home bakers adopt it. Mix and bulk in the evening, shape before bed, bake in the morning. Anthes prefers quiet mornings and a warm oven, and cold retarding is what makes that schedule work without shortening any stage.
